Thanksgiving 2009

 

I always try at least one new recipe for Thanksgiving.  This year I'm trying two: a pecan pumpkin pie and spiced cranberries.  If they're good, I'll supply the recipes shortly. BTW, we are cooking the turkey from a frozen state again this year--it comes out great and is the easiest way to cook turkey that I've found. Unwrap, place in your pan/rack; cook at 325 for 3 hours; remove giblets sack; return to oven for a few more hours (We cooked our 15 lb. bird for just shy of 7 hours).

 

Pumpkin Pecan Pie (from Prevention November 2009)

This was great, and lots less fat than comparable recipes

1/4 C. butter, divided

1/1/4 gingersnap cookie crumbs (about 30 cookies)

1 1/2 t. vanilla

1 can pure pumpkin (I used my own cooked frozen pumpkin)

1 lg egg

1 lg egg white

1/2 t. gr. cinnamon

1/4 t. gr. nutmeg

3/4 C dark brown sugar

2 T. honey

3/4 C. pecan halves

Heat oven to 350. Melt 2 T. butter in microwave and mix with cookie crumbs and vanilla extract in bowl. Press onto bottom and sides of 8" pie plate. Bake 10 min. and cool.  Blend pumpkin, egg, egg white, cinnamon, nutmeg, and 1/2 C. of the sugar. Spread in crust. Bake until filling is set around edges or knife inserted in center comes out clean 35 to 40 min.  Heat broiler. combine honey and remaining 1/4 C. sugar and 2 T. butter in small non stick saucepan. Cook over low heat until sugar dissolves, stirring constantly. Stir in pecans to coat. Spread topping over pie. Broil until bubbly and golden brown (do not burn), about 2 min.

 

Spiced cranberry sauce (from BHG November 2009)

Delicious! Different! Stepped up a few notches from your traditional cranberry sauce!

1 C Pinot Noir verjus OR 3/4 C. grape juice + 1/4 C red wine vinegar

1 C. sugar

1 bayleaf

1 3- to 4-inch stick cinnamon

1 t. kosher salt

4 C. cranberries

Combine all ingredients but cranberries. Bring to a boil. Add cranberries, return to boiling; reduce heat simmer uncovered for 10 min. stirring frequently. Remove from heat; transfer to bowl. Cool to room temp. (about 2 hrs). Remove and discard bay leaf and cinnamon stick.

December 2008--so we made tamales at the Etcheverria house. I'll tell you all about it when I have a few minutes.

 

The idea has been around for years, as my grandma made over 100 tamales every Christmas, and brought them to our house for a wonderful Christmas eve feast. Here recipe, as reproduced by my mom, is on this site. She used chicken and a little pork. She had a set of home made boards to aid in tying up the the tamales. Yes, she tied them, something I have not seen others do.

 

So the Sunday before Christmas some brave souls assembled to do the job: Ernie, Ward, mom, me, Colleen, Erik. We had baked a turkey and cooled it. I used by favorite method of cooking from frozen. We sliced white meat and ground dark meat, adding spices and broth to make a nice paste.

 

Colleen cooked the corn meal mush. We used instant masa. I am not sure I like the instant; it produced a stiffer mush than we were used to. I do not know how to get around that, except to use regular cornmeal in the future.

 

We steamed corn husks and began assembly. We learned that there are different ways to make tamales.  Erik had learned from Mike to fill and fold without tying them. I had learned to use a custom board to lay out and assemble the tamales, then tie at each end with string and cornhusk strips in the middle.  We soon decided that Erik's way was better!  Making in quantity makes the tying thing too time consuming.
